Day 3 plus a review of Hail Merry's treats and a giveaway!?





It's already Day 3! Here we go!

Breakfast: I’m still rawking the green smoothies from Young and Raw’s 30 Day Green Smoothie Challenge. Today’s smoothie was pretty tasty…again my pineapple sucked horribly causing a lack of deliciousness in my smoothie but still refreshing, tropical and Pina Colada like. I should have added some lime to add a bit of tang…cause we all know how I love some tang in my smoothies.:)

Day 6: Creamy Tropical Cleanse

  • 1 cup Fresh or frozen Pineapple
  • ¼ Avocado
  • 1 inch of Ginger
  • 2 handfuls of Kale or other greens
  • 1 cup of water or coconut water, although I bet coconut milk would be tasty too!


Snacks: A Blueberry Kombucha from MTO, banana, pear, pineapple, a pummelo and raw almond butter.

Lunch: As I stated before, pictures speak louder than words to me when it comes to searching for recipes. So you can probably see why this recipe stuck out and became a must make for this challenge. Not only does it look fresh and colorful but it contains guac and raw sour cream…yumm! At first I thought making this would be challenging, but it turned out to be pretty simple to make! I didn’t stuff my rolls as much as I should have or would have liked to. Being my first time, I wanted to make sure they just closed. I was working with only one zucchini so it was important for them to come out perfect with the first try…and oh they did! The only downside is that they are better fresh; they got a bit watery come lunch time after making them overnight. Still tasty though!

Raw Zucchini, Carrot, and Cashew Salad Rolls
 Adapted  from Young and Raw
Modified to serve one, 2 large rolls

For the rolls:

  • 1 medium Zucchini, shaved thinly lengthwise
  • 1 Carrot, julienned or grated
  • ¼ Red Bell Pepper, julienned
  • ¼ - ½ Cucumber, peeled and julienned
  • Cilantro Leaves
  •  Sprouts
  • Mixed greens

Raw Sour Cream

  • ¼ cup Cashews, soaked, rinsed and drained
  • Pinch of sea salt
  • ½ lemon, juiced
  • 2-3 tbsp of water

  1. Place into a food processor or blender (I used my magic bullet) and blend till smooth and creamy.

Guacamole

  • Make your favorite recipe!!

To assemble the rolls:

  1. On a clean board, lay 6-8 zucchini strips lengthways, making sure to overlap them. Spread an even layer of guacamole followed by an even layer of sour cream. Top with favorite mix of veggies and roll up tightly. Repeat with remaining ingredients, and like they say, EAT RIGHT AWAY!! (I clearly missed that part of the instructions! Dope!)


Dinner: I did a lot of snacking :)

Dessert: Hail Merry’s raw Salted Caramel and Strawberry Macaroons and a piece of the Persian Lime Tart.

One "word", OMG…yep that’s all you need to know is that Hail Merry produces the absolute best tasting, high quality, OMG raw treats. Coconutty macaroons, tarts that are fudgy, sweet, addicting and way better than the “regular” kind…seriously.

I discovered Hail Merry via Facebook before I tried their decadent treats. I was once again, looking for raw desserts to add to my list of raw food products to help in my transition to a raw food life lifestyle and Hail Merry’s treats sounded promising. It wasn’t hard to spot the bright, color coded tarts in the cold section of WholeFoods, even if they WERE hidden. My very first tart was the Chocolate Mint and when I say it was love at first bite, I literally mean it. One bite and next thing I knew I was buying every flavor I could find on every grocery trip, finding an excuse to eat half of one if not an entire one in on sitting, and even traveling to another store just to grab other flavors I had not tried yet! Thankfully I can find most of them at my local grocer now…but I will travel for raw, vegan treats if needed!

The chocolate ones are sweet, fudgy and melt-in-your mouth creamy. They literally take you to heaven and back. The lemon, lime and coconut tarts are a better version of your favorite cream pies offering a crunchy, buttery crust and a creamy, tart filling. Oh and the Chocolate Almond Butter one…think GIANT Almond Butter Cup! Holy yes!

Hail Merry does produce and sell other great products including macaroons, raw, flavored nuts like the crunchy, candied Vanilla Maple Almonds, and a variety of raw granola which I love on top of yogurt and in a bowl with raw almond milk.
 
Recently, I was gifted with not only some free coupons but a T-Shirt and a bag each of Hail Merry’s brand new macaroons in Strawberry and Salted Caramel flavor. The blonde and chocolate ones are absolutely delish but these flavors top them both!

The Salted Caramel macaroons are coconutty with a strong yet pleasant taste of vanilla and maple while the Strawberry ones are like little bites of Strawberry Shortcake. The strawberry flavor really shines through in these ones and provides a flavor burst that is out of this world!! I’ll be honest, I was a bit skeptical because I’m not a huge fruity dessert fan but honestly, these ones are my fave!!

    1. LOL I completely understand! I'm the same way! It drives me bonkers when Natural Products West passes and all these delicious, new, vegan and/or products are introduced, yet not available.   3. What?! They have salted caramel macaroons? I knew about the strawberry ones (and tried the chocolate ones <3), but those are news to me. Cannot wait until they are available in stores! Hail Merry has been eating all my cash since I discovered them about a month ago, but at least they're reasonably healthy :)

    1. Yes, yes they do!!! Both are equally delicious. They released them both at the same time online during Valentine's Day. I can't wait til they hit the market! Haha I totally understand. Hail Merry has been enjoying a good chunk of my check as well, but like you said, at least they're made with healthy, wholesome, organic ingredients. Plus a treat everyday is aye okay in my book.
